Cauliflower Walnut Soup

Cauliflower Walnut Soup

Makes about 6 large servings at about 100 calories each

4C organic chicken broth
2 sweet onions
3T raw walnuts
1/2C coconut milk
2T butter
salt, pepper, paprika
nori for garnish
1 cauliflower


In 2C of the chicken broth simmer cut up onions and cauliflower for 30-40 minutes or until very tender. During the last 5 minutes of simmering add 2C of broth, 2T of butter, 1/2C coconut milk and salt and pepper to taste. Put just enough of the mixture into a blender so you can completely and thoroughly blend the walnuts. After the walnuts are blended continue to add the rest of the mixture until all is blended smooth. Return soup to the stove to keep warm. Serve with a dusting of paprika and confetti nori for garnish.
